Awesome, so on Ubunutu you can actually just install the cryptsetup package, and then you'll be able to format thumbdrives with an encrypted file system. I know that 7-zip offers a minimal amount of encryption, maybe a more simplified solution like that would work better in your case.
I've never used any of the GUI tools since I find it easier to just use the disk utility and format the disk with an encrypted LVM, I hope that someone on here can help you out suggesting one of the GUI tools. Why do people keep spreading this? That report was a misunderstanding. In a worst case scenario, sure, they fail without warning. Keeping backups is always good. But leaving it unplugged? That's bull.Using flash memory for long-term storage is not recommended, because the memory cells need a refresh from time to time or they will loose their content. You should at least keep an additional printout as backup.

Stick with paper if you wish. I have no problem with that. But declaring "enough said" is a childish response to discussion of other methods.
