It is important to notice that you have choice, the doc is written by Core, so links to the Core release. You can also use the Classic release as listed here;

Why is this called a soft fork? Clients that don't upgrade will be unable to successfully mine right?

That is correct, all miners have to use a new client to continue mining after a soft fork.
